Las uvas fueron seleccionadas a través de la alfombra de selección, antes de entrar en la prensa y fueron ligeramente prensadas. La primera fermentación alcohólica se llevó a cabo a una temperatura de 13/14ºC en pequeñas cubas de 500 litros. El embotellado para la segunda fermentación se realizó según el método tradicional, con levaduras libres y manualmente, desarrollándose en bodega a una temperatura constante de 17ºC. Se hizo battonage en cada botella una vez cada dos meses hasta el degüelle. Todo hecho manualmente desde la vendimia hasta la caja.
