Este Espumante permanece en bodega 60 largos meses a temperatura constante de 12ºC. El Sauvignon Blanc muestra sutiles notas de manzana verde de la Vinha do Bárrio en Mogofores. La Baga procedente de la Quinta do Amaro en Outeiro de Baixo, evidencia el potencial del terroir de la Bairrada para esta variedad de acidez delicada y magníficas notas de tierra que le dan origen. El degüelle glacé del Espumante São Domingos Elpidio Cuvée Bruto libera las levaduras y a continuación se añadió 3,70 g/L de licor de expedición para terminar el vino. Después de un período de dos meses tras todo este proceso, la botella de espumante está lista para salir al mercado.
