Quinta dos Carvalhais es la marca de vinos especializada en la producción de los mejores y más sabrosos vinos del Dão, constituyendo la mayor referencia en la región - representa el arte, la autenticidad y la calidad de los mejores vinos del Dão. En este Quinta dos Carvalhais Reserva Blanco se recuperan viejas costumbres de la región en lo que se refiere al envejecimiento de vinos blancos, cuando era común su almacenamiento durante largos períodos en viejos toneles de roble. Las uvas fueron recibidas en la bodega en cajas de 20 Kg, siendo descargadas directamente en la prensa neumática. Los mostos, debidamente protegidos de la oxidación, fueron sometidos a decantación estática a baja temperatura por un período de 24 horas. Luego fueron enviados a depósitos de acero inoxidable con temperatura controlada, donde ocurrió la fermentación, durante unos 20 días, a temperaturas que no superaron los 16ºC. Envejecimiento de 16 meses en barricas usadas (20% 500 litros; 80% 225 litros).
