Quinta dos Carvalhais Colheita es un vino tinto del Dão de calidad excepcional, máximo exponente de la elegancia y riqueza. Heredera de los saberes antiguos, Quinta dos Carvalhais combina la experiencia con la innovación para crear vinos muy elegantes, con sabores de intensa delicadeza y la personalidad única de la región. Las uvas fueron vendimiadas por variedad y por parcela, realizándose en ese momento una rigurosa selección cualitativa de las mismas. Después de un despalillado y prensado suaves, las uvas van, por gravedad, a cubas de acero inoxidable de pequeña dimensión y control de temperatura, donde se vinifican, variedad por variedad. La fermentación alcohólica ocurrió durante unos 8 días, a una temperatura media de alrededor de 27ºC, habiendo la Touriga Nacional permanecido en maceración postfermentativa por 10 días más. Este vino tuvo una crianza en barricas de roble francés usadas durante un período de 12 meses. El lote final se elaboró basándose en la selección cualitativa de numerosas catas y análisis realizados durante este período, que permitieron elegir los mejores vinos, variedad por variedad. El vino fue sometido a una ligera clarificación y filtración antes de su embotellado y fue embotellado sin tratamiento de estabilización en frío, lo que puede provocar la formación de sedimento durante su envejecimiento en botella.
