El whisky Akashi es el único whisky en el mundo producido por un Toji (maestro en el arte de hacer sake), implementando metodologías de producción de sake en el proceso de fabricación de whisky. El alambique utilizado es más pequeño que el utilizado por las destilerías escocesas y otras japonesas, lo que, a su vez, disminuye los niveles de alcohol fusel. Como resultado, el whisky Akashi no requiere un proceso de envejecimiento tan largo, mientras que su malta principal (fuerza del barril) es suave y delicada.
