Vinification of Vinho Vale Dona Maria Vinhas do Sabor Tinto 2020: All grapes are picked by hand, carefully selected on the sorting mat and de-stemmed before entering the granite presses. All grapes are crushed in lagares and then ferment for 7 to 10 days at temperatures of 22º to 27ºC in stainless steel vats with manual pumping over. The wines are removed cleanly into second and third use 225L French oak barrels where malolactic fermentation takes place.
