En Mouchão vinificamos TODOS los tintos en lagares de piedra abiertos. Racimos completos, con raspón, se incluyen en el proceso de maceración por lo que la altura de la cosecha es especialmente crítica, ya que es necesario encontrar un equilibrio delicado entre azúcares, ácidos, maduración fenólica global (color, taninos, etc.) así como la lignificación del raspón. Los racimos completos, recogidos a mano, se transportan en cajas de 20 kg a la bodega, donde se pisan a pie en lagares y se dejan fermentar durante aproximadamente 4 a 6 días. En 2016 los taninos, el color y la maduración del raspón estuvieron muy cerca de la perfección. Este vino joven tendrá su fermentación maloláctica en otoño, en grandes toneles de madera (5 000 L). A mediados del invierno se filtra tras lo cual permanece en crianza sin ninguna intervención durante unos 4 años en los famosos toneles de Caoba y macacaúba. Después de embotellado, envejece en nuestras bodegas por 3 años más antes de su lanzamiento. Decantar o abrir entre 12 y 24 horas antes de servir. En su mejor potencial hasta 2036.
