Vinificación del Vino Monte Meão Vinha dos Novos Tinto: Tras el estrujado, las uvas pasan por un choque térmico, seguido de pisado a pie durante cuatro horas, en lagares de granito. Después de este proceso, las uvas se transfieren a balseiros de madera, donde fermentan durante unos 10 días. La crianza dura 15 meses, en barricas usadas de 225 litros, de roble francés.
