El Real Companhia Velha Espumante brut es el resultado de una cuidadosa selección de Pinot Noir y Chardonnay provenientes esencialmente de la Quinta de Cidrô en São João da Pesqueira, siendo que una parte del Pinot se recoge en la Quinta do Casal da Granja en la meseta de Alijó. El terroir de Cidrô, por su altitud y clima templado, permite un ciclo más largo en la vid, permitiendo así que tanto el Pinot Noir como el Chardonnay puedan ser vendimiados en el momento perfecto para ser espumantizados. Esta bellísima Quinta, aunque está ubicada a 550m de altitud, dispone de un suelo pobre, esquistoso, lo que resulta en menores producciones, lo que confiere a este Espumante una excelente textura, volumen y acidez. Ya en la meseta de Alijó, en la Quinta do Casal da Granja, los suelos más ricos y el clima aún más fresco, resultan en vinos más frescos y aromáticos. A través de una poda intencionada, para preservar un nivel elevado de acidez natural de las uvas, se recogen los racimos más verdes que son vinificados en pequeñas cubas de inox como bases para los lotes finales.
