Para evidenciar el carácter del terroir, surge este vino de una viña llamada Vinha Formal. Ubicada en una pequeña pendiente orientada al Este, en Óis do Bairro, está en el corazón del mapa de los vinos blancos de la Bairrada, tal como fue delimitado por António Augusto Aguiar en 1866, en la "Memoria sobre los Procesos de Vinificación". En esta viña, la primera cosecha para espumante se realiza entre mediados y finales de agosto, para obtener altos niveles de acidez, ideal para espumante; la segunda cosecha se realiza dos semanas después, para la producción de vino blanco.
