Durante la vinificación se maceran los hollejos durante 12 horas, seguido de la fermentación alcohólica a 16ºC, utilizando únicamente el mosto de lágrima más puro. Bacalhoa Bical Bairrada Clássico Branco 2021 se elabora exclusivamente con uvas de la variedad Bical. Fermentamos el 60% del vino en barricas nuevas de roble francés de 1 año, realizándose battonage (removimiento de las lías finas para aumentar la estructura gustativa del vino) durante 6 meses. El vino envejeció durante 12 meses en botella.

Notas minerales perceptibles en aroma y sabor que le aportan complejidad y longevidad. Buena acidez, refinado y elegante. Enorme capacidad evolutiva.
Aroma intenso, muy delicado, con matices de fruta de pulpa blanca y notas tostadas muy suaves.
