Los Gimonnets son viticultores desde mediados del siglo XVIII. En esa época, entregaban sus uvas a los comerciantes de vino y sus primeros vinos se lanzaron alrededor de 1935. Desde entonces, la propiedad ha crecido hasta 28 hectáreas de Chardonnay en la Côte des Blancs, con parcelas en los Premiers Crus Cuisus y Vertus y en los Grands Crus Cramant, Chouilly y Oger. Con un viñedo dedicado exclusivamente al Chardonnay, se podría pensar que los vinos de Olivier y Didier Gimonnet son todos iguales, pero no... Enólogos apasionados, amantes de sus terroirs y mezcladores precisos, se esfuerzan por dar a cada cuvée su expresión particular. Para ello, cada vino se vinifica parcela por parcela, en cubas adaptadas a los diferentes volúmenes. El estilo Gimonnet es un estilo de elegancia, finura y mineralidad.
