Además de su notoriedad en la producción de vinos del Alentejo, la Bodega Cooperativa de Borba tiene una gran tradición en la producción de aguardientes, utilizando y seleccionando variedades tradicionales de la región de Borba. El bagazo es el producto resultante de la prensada de las masas vínicas provenientes de la elaboración de vinos, las cuales son destiladas en vasos de destilación propios, obedeciendo rigurosamente a temperaturas y tiempos de destilación, garantizando así la separación de los diferentes alcoholes, la genuinidad y calidad de las aguardientes. A continuación envejece alrededor de 24 meses en barricas de madera, roble francés, para el afinamiento final antes de su embotellado.
