Alvarinho e Palácio da Brejoeira são quase sinónimos. É o produtor com mais história e tradição na produção de vinhos desta casta, quase podendo dizer-se que foi por causa dela que o vinho branco Alvarinho se tornou conhecido e tem hoje o estatuto que tem. A Quinta da Brejoeira, situa-se em Monção e é uma propriedade com 30 hectares, dos quais 18 de vinha exclusivamente plantada com Alvarinho. O ex-libris da quinta e da região é o seu palácio, uma grandiosa construção em estilo neoclássico, do final do século Séc. XIX (1806). D. Hermínia Paes presidiu aos destinos desta magnífica propriedade e foi a grande obreira do seu sucesso.Vinificação da Aguardente Velha Palácio da Brejoeira: obtida da destilação da casta Alvarinho de qualidade, é estagiada em barricas de carvalho Francês, permanecendo numa temperatura constante na adega antiga do Palácio da Brejoeira, em estágio, entre 10 a 12 anos.
