Vinificación del Vino Tinto Reserva Quinta das Bageiras 2021: algunas de sus uvas Baga aportan uvas viejas, pero en los años en los que no hay bodega y hay reserva, se destina a este vino una retención de la uva de las uvas viejas. Estas uvas se fermentan durante 5 a 8 días en prensa abierta sin despalillar (no retirar las bayas del racimo). Posteriormente se remonta con masas de madera, varias veces al día, hasta alcanzar la intensidad adecuada. Luego, el vino acaba fermentando en toneladas de madera vieja. Mientras reposa, se limpia y envejece en las mismas barricas durante unos 18 meses. Se embotella sin ningún tipo de clarificación ni filtrado. Todos estos procesos se realizan manualmente.
