Vinificación del Vino Branco Covela Reserva 2016: Vendimia manual, organizada por parcelas de viñedo para asegurar la vendimia en el momento adecuado. Transportar las uvas en cajas pequeñas para evitar aplastamientos. Selección manual de racimos. Maceración de pieles en frío. Acechado total seguido de suave prensado. Fermentación espontánea en barricas de roble de bosques austriacos y franceses. Crianza sobre lías totales, con batonnage periódico. Sin estabilización ni filtración.
Pajizo brillante con reflejos cítricos.
Ataque untuoso. Acidez equilibrada que aporta una enorme personalidad a la cata. Mineral. Final largo, elegante y crujiente.
Intenso, profundo y complejo. Notas de flores blancas como tilo y madreselva, frutos de árboles como peras, albaricoques y ciruelas blancas. Ligeras notas especiadas
