Este es un aguardiente producido únicamente con los orujos de uvas tintas. Una de las características raras de la producción de este aguardiente, muy importante en el aspecto analítico y aromático, es que la destilación se realiza inmediatamente después de concluir la fermentación en el lagar, obteniendo así un contenido de metanol muy bajo. Otra particularidad es que se vinifica sin retirar el engaço, ya que hemos concluido en experiencias anteriores que la intensidad aromática de un aguardiente de orujo proveniente de uvas no desengaçadas es mucho más delicada. Este aguardiente se destila en alambique de columnas en nuestra propia bodega.
