En Mouchão vinificamos TODOS los tintos en prensas de piedra abiertas. En el proceso de maceración se incluyen racimos completos, con raspón, por lo que el momento de la cosecha es especialmente crítico, ya que es necesario encontrar un delicado equilibrio entre azúcares, ácidos, maduración fenólica global (color, taninos, etc.) así como lignificación. del engaço. Los racimos completos, vendimiados a mano, se transportan en cajas de 20 kg hasta la bodega, donde se pisan a pie en prensas y se dejan fermentar durante aproximadamente 4 a 6 días. En 2016 los taninos, el color y la madurez del raspón estuvieron muy cerca de la perfección. Este vino joven realizará la fermentación maloláctica en otoño, en grandes barricas de madera (5.000 L). A mediados del invierno se filtra, luego de lo cual permanece en crianza sin intervención alguna durante aproximadamente 4 años en nuestras tinas de caoba y macacaúba. Tras ser embotellado envejece en nuestras cavas durante otros 3 años antes de ser decantado o abierto entre 12 y 24 horas antes de servir. En su mejor potencial para 2036.
