A Aguardente Bagaceira Velha Alvarinho Quinta de Soalheiro, surgiu em 1999, com o lançamento da 1ª série de 1428 garrafas numeradas. Desde a primeira colheita, que a elaboração desta aguardente está sujeita à destilação dos melhores bagaços de Alvarinho, envelhecendo ao longo dos anos em cascos de carvalho, do qual lhe extrai a cor e a estrutura que completam o aroma intenso da casta.As películas aromáticas das uvas da casta Alvarinho, separadas do mosto por prensagem na vindima, fermentam durante cerca de 1 mês em ambiente sem a presença de ar (anaerobiose). Esta fermentação transforma o açúcar residual existente em álcool, extraindo os melhores aromas das películas. A destilação lenta em alambique tradicional contribui para concentrar esses aromas, dando origem a uma aguardente muito aromática característica da casta Alvarinho.A alternância do envelhecimento em cascos de carvalho novos e usados transmite com o passar dos anos um aroma e sabor muito particular que conferem a esta aguardente uma personalidade única.
