Vinificación del Vino de Oporto Quinta Vale Dona Maria Reserva: Las uvas se pisan a pie, antes de la fermentación, con la incorporación del 15% del total de aguardiente a añadir. Esto permite una maceración de las uvas a temperaturas más bajas, y durante un período de tiempo más extenso antes de la fermentación. Cuando el mosto está listo para la fortificación, esta se realiza de una sola vez, añadiendo el aguardiente al mosto y a los hollejos en el lagar. Una nueva pisada asegura una buena homogeneización y la parada completa de la fermentación. El mosto y el aguardiente permanecen en el lagar por dos a cuatro días más, con una pisada muy ligera de 10 minutos dos veces al día. Se traslada a los toneles junto con las prensas. Los vinos envejecen en toneles muy antiguos (más de 100 años) de roble y castaño, y en pequeñas cubas de acero inoxidable hasta el mes anterior al embotellado.
