Vinificação do Vinho Quinta da Pedra Escrita Biológico Branco Magnum: Vindima manual para pequenas caixas perfuradas de 15 Kg, fermentação com tecnologia a frio, em ambiente redutivo, com temperatura controlada por volta dos 16ºC. As uvas são prensadas sem esmagamento e sem desengace sob atmosfera inerte de modo a preservar todo o potencial aromático das uvas. É feito um grande esforço para que todas as operações pré-fermentativas sejam efectuadas dentro do maior rigor, sendo responsáveis pela qualidade intrínseca do futuro vinho. A totalidade do vinho fermenta em madeira de carvalho francês usada e aí permanece após uma pequena trasfega sobre borras finas com agitação periódica “battonage” até à feitura do lote final no fim da Primavera.Fermentação e estágio de 6 meses em madeira de carvalho francês com agitação das borras até ao engarrafamento, após o que estagiou em garrafa durante 4 meses.
