Melgaço, the northernmost region of Portugal, is protected by a range of mountains that creates the perfect balance of rainfall, temperature, and hours of sunshine needed for the best ripening of Alvarinho grapes. This climatic characteristic during ripening is often associated with the microclimate of Monção and Melgaço, which alternates warm days with cool nights, preserving fresh, fruity aromas with noticeable yet moderate acidity, in keeping with the style we have defined for Soalheiro. Vinification of Soalheiro Vinho Verde Alvarinho: The grapes, exclusively of the Alvarinho variety, are hand-harvested into small-capacity crates and transported to the winery within a short period of time. After pressing, the resulting must settles for 48 hours, followed by fermentation at a controlled temperature using yeasts preselected for this purpose. Bottling takes place after the wine has been stabilized, followed by bottle aging. The vinification of Soalheiro Alvarinho is aimed at producing a wine that concentrates the quality of the grapes and allows for good development after bottling.
