O Real Companhia Velha Espumante bruto é resultado de uma criteriosa selecção de Pinot Noir e Chardonnay oriundos essencialmente da Quinta de Cidrô em São João da Pesqueira, sendo que uma parte do Pinot é apanhado na Quinta do Casal da Granja no planalto de Alijó. O terroir de Cidrô, pela sua altitude e clima ameno, permite um ciclo mais longo na videira, permitindo assim que tanto o Pinot Noir como o Chardonnay possam ser vindimados na altura perfeita para serem espumantizados. Esta belíssima Quinta, embora esteja localizada a 550m de altitude, dispõe de um solo pobre, xistoso, o que resulta em menores produções, o que conferem a este Espumante uma excelente textura, volume e acidez. Já no planalto de Alijó, na Quinta do Casal da Granja, os solos mais ricos e o clima ainda mais fresco, resultam em vinhos mais frescos e aromáticos. Através de uma monda propositada, de forma preservar um nível elevado de acidez natural das uvas, são apanhados os cachos mais verdes os quais são vinificados em pequenas cubas de inox como bases para os lotes finais.
