O Pio Cesare Barolo Ornato Tinto 2021 é um Barolo de expressão superior, fruto de seleção rigorosa de uvas 100% Nebbiolo provenientes exclusivamente da emblemática Cascina Ornato, em Serralunga d’Alba — o primeiro cru de Barolo da casa Pio Cesare. Com 14,5% de álcool e amadurecimento intenso de aproximadamente 30 meses em tóneis de carvalho francês e de Slavônia (com parcela menor em barriques), revela-se um vinho clássico, estrutural e profundo, com grande finesse. Aromaticamente, exibe notas complexas de frutos vermelhos, especiarias doces, mentol, cacau, amadeirado e nuances minerais e balsâmicas, num conjunto elegante e potente. Em boca, impressiona pela concentração, taninos finos e acidez equilibrada, resultando num final de persistência marcante e frescura digna de grandes vinhos de guarda. Produzido em quantidades reduzidas (cerca de 13 mil garrafas e algumas magnums), exige paciência. Ideal para acompanhar pratos intensos como carnes vermelhas, brasados ou caça.
