Vinification of Quinta de Azevedo Torra Grande Escolha Branco: The manually harvested grapes are immediately sent to the refrigeration chamber. After reaching 10ºC, they are gently transferred to the destemmer and pressed softly at low temperatures, followed by static cold decantation for 3 to 5 days, with the lees being stirred in the first 24 hours. Fermentation occurs at a controlled temperature between 15-16ºC. Maturation: After alcoholic fermentation, the wine aged for 8 months in 1200L barrels and 500L French oak barrels of 1st and 2nd use. 15% of the batch aged on lees in stainless steel tanks to preserve all freshness.
