Vinification: Coming from small plots, the previously selected grapes are hand-harvested into boxes in September, early in the morning, so that they arrive at the winery still during the morning. After 3 days of pre-fermentation maceration, alcoholic fermentation takes place in stainless steel tanks at 26ºC. The masses are pressed in a hydraulic press and malolactic fermentation occurs in barrels (new and second year) of French oak, where it ages for 14 months.
