Vinificação do Vinho Castello D Alba Reserva Tinto 2021 de 3 Litros: Vindima manual, recepção com desengace total e esmagamento de imediato, as uvas são fermentadas por castas e por lotes, de modo a desde cedo se conseguir fazer uma rigorosa selecção que vai depois dar origem ao “blend”, muito tradicional do velho mundo, revela a arte de seleccionar uvas por parcelas e a arte de seleccionar vinhos para depois lotar. A fermentação é feita em cubas inox de pequena capacidade, com temperaturas em torno dos 28 ºC. Macerações suaves e controladas de modo a obter vinhos elegantes e aromáticos. Estágio: Parte do lote estagia por um período de 12 meses em madeira de carvalho francês predominantemente, com uma pequena percentagem de madeira americana .
