Scala Coeli, owes its name to the Monastery of Santa Maria Scala Coeli, commonly known as the Carthusian Monastery, a place where Carthusian monks lived in silence and prayer. It results from the best vinifications of each year from grape varieties that are less traditional to the Alentejo. Obtained from the best vinifications of the harvest, using grape varieties that are less traditional in the region. In 2020 it resulted from the vinification of the Touriga Nacional variety, harvested on September 14th. On this day, the grapes were carefully harvested and taken to the cellar, where cold pre-fermentation maceration took place, followed by alcoholic fermentation at a temperature of 28ºC and prolonged maceration. Incubate for a total of 30 days. Aged for 15 months in new French oak barrels.
