Manual harvest for 20 kg boxes. The grapes are completely destemmed before being foot-trodden in a lagar. Spontaneous malolactic fermentation in new French oak barrels and stainless steel. Aged for 20 months in new and used French oak barrels. Wine not cold stabilized and only lightly filtered.
