Vinification of Quinta da Pedra Escrita Biological White Wine 2021: Manual harvesting into small 15 kg perforated boxes, fermentation with cold technology, in a reductive environment, with a controlled temperature of around 16ºC. The grapes are pressed without crushing or de-stemming under an inert atmosphere in order to preserve the grapes' full aromatic potential. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entire wine ferments in used French oak wood and remains there after a short racking on fine lees with periodic battonage stirring until the final batch is made at the end of spring. Fermentation and aging for 6 months in French oak wood with stirring the lees until bottling, after which it aged in the bottle for 4 months.
