As uvas provenientes das vinhas, a maioria das quais muito velhas com mais de 50 anos, são submetidas a uma triagem/escolha à chegada à adega, sendo posteriormente desengaçadas. Segue-se a maceração pré-fermentativa a baixa temperatura com pisa robotizada em lagares de inox. São de seguida conduzidas para cubas de inox com temperatura controlada entre 25 e 28º onde terminam a fermentação alcoólica. Durante esta procedem-se aos habituais trabalhos de remontagem e “delestage” que visam a extração rigorosamente seletiva e restringida aos constituintes desejados. A vinificação termina com a maceração pós-fermentativa. As massas permanecem em contacto com o mosto até o máximo de 18 dias. Estágio em barricas de carvalho francês durante um período de cerca de 18 meses.Utilização de 70% de barricas novas e 30% de segundo ano.
