The harvest of Íncola is a truly surgical harvest where only the grapes that are at the perfect levels of ripeness for the profile of this wine are hand-picked. Upon arriving at the winery, the grapes go through a manual selection conveyor belt where bunches that are not in perfect conditions of ripeness and health are removed - despite the selection made in the vineyard, this second selection allows for the identification of unwanted bunches that may escape the first hand. After selection, the grapes are directed to small French oak barrels where 80% of the bunches remain whole and with stems, while 20% is destemmed and crushed. The alcoholic fermentation of the must begins, and during this process, a light "pisage" is done and all pump-overs are done by bucket. The goal will always be to seek elegance and finesse, avoiding excessive extraction. Malolactic fermentation and aging take place in barrels (500 L) and casks of used French oak for a period of 18 months until bottling, which occurs without filtration.

The flavors align with the aromatic profile, featuring an excellent mouthfeel that gradually reveals nuances and layers of flavors in a very fine manner, always marked by its fresh and vibrant tannin.
On the nose, it presents itself as very complex and mysterious, with the intensity and depth characteristic of a wine originating from very old vines, but on the other hand with a fresh, herbaceous, and wild aromatic profile. Nuances of flowers, cactus, and mountain herbs emerge, combined with beautiful, yet delicate, notes of red fruit, black fruit, and earthy suggestions.
