Akashi Ume est un whisky japonais vieilli en fûts de bourbon puis affiné pendant quelques mois en fûts d'Umeshu Shiratama (un liqueur de prune japonais). Il provient de la plus ancienne des distilleries japonaises, la distillerie Eigashima, plus connue sous la marque White Oak. Akashi Meisei est un mélange de 30 % de single malt et de whisky de grain.
