Hand-picked at optimum ripeness, the grapes are destemmed, crushed, and vinified according to a process based on careful maceration to extract color, tannins, and aromas from the skins, complemented by regular pumping over during fermentation. Fermentation takes place in lagares at a controlled temperature of 28-30ºC until the desired Baumé level is reached. At this stage, grape spirit is added (fortification), resulting in a fortified wine. A high-quality wine from a single vintage, bottled between the fourth and sixth year after harvest.
