Vinification : Récoltées à la main à leur point optimal, les raisins sont éraflés, écrasés et vinifiés selon un processus basé sur une macération soigneuse avec extraction de couleur, de tanins et d'arômes des peaux, complété par des remontages permanents pendant la fermentation. Celle-ci se déroule dans des lagars, à une température contrôlée entre 28 et 30ºC, jusqu'à atteindre le degré Baumé souhaité. À ce stade, on procède à l'ajout d'eau-de-vie (bénéfice), donnant naissance à un vin fortifié. Élevage : La nature nous offre des années spéciales. Distincte d'année en année, fruit de conditions particulières, chaque Millésime de Cálem donne naissance à des vins uniques, de caractère exceptionnel et de qualité premium. Cálem fait vieillir tous les Portos Millésimés pendant une période minimale de 10 ans et ne met en bouteille que selon les besoins du marché, maintenant tout le reste du vin à évoluer en bois, gagnant ainsi une complexité singulière.

Ton intense
Rond et intense en bouche, il révèle des saveurs de fruits bien mûrs, combinées à des tanins encore jeunes et quelques notes de fruits secs. Finale en bouche intense et longue.
Au nez, on retrouve des notes de gelée de fruits, combinées avec des notes de prune et de raisin sec, ainsi que de légers accents d'épices, comme la muscade.
