The harvest is done manually, with a manual selection of the bunches. The grapes are destemmed and gently crushed. Traditional granite lagares with foot treading were used as fermentation vessels. Subsequently, the wine aged in French oak barrels for at least 18 months. All wines are sealed with natural cork. Not being filtered or cold stabilized, these wines may produce a sediment with age.
