Winemaking of Conde D Ervideira Private Selection Red Wine 2019: From the selection of the best grape batches, vinified grape variety by grape variety. Aragonez ferments in “vinimatics”, while the other two varieties, Trincadeira and Alicante Bouschet, ferment in lagares equipped with a mechanical foot treading robot. The process takes place at a controlled temperature of 25ºC. A 12-month aging in mostly new French oak barrels. The blend is then bottled, remaining in the cellar for a period of 18 months.
