Altano Reserva RedWine making: The grapes are handpicked into 20 Kg boxes. In the cellar, bunches are selected, followed by gentle destemming and a second selection, berry by berry. The whole berries are then moved by gravity to stainless steel fermentation tanks and gently crushed at the tank entrance. Each fermentation is closely monitored, with temperatures and maceration movements by pumping over and rack and return adjusted so that each wine retains the full potential of the grapes from which it originates. After alcoholic fermentation, a post-fermentation maceration follows to extract tannins from the seeds, complementing the tannins extracted from the skins, developing a fuller “mouthfeel” by enhancing structure and smoothness.
