Viticulture: A unique terroir in the world, in the middle of the Atlantic Ocean, at the base of the volcanic mountain of Pico, the vines are planted in the cracks of the rock, next to the sea, where you can hear the “singing of the crab,” as this is where there is the most sun and heat. A proximity sometimes of just a few meters that requires the protection of the vineyard by walls (currais), from the strong and salty Atlantic winds. Vinification of Maçanita Terrantez do Pico Branco: Selective manual harvest in 20Kg baskets, mostly from the island of Pico and a small percentage from São Miguel. Whole cluster pressing, racking after 12h. First presses fermented in stainless steel tanks with temperature control to maintain the purity of the grape variety and second presses fermented in 3rd year barrels (30%).
