The Aguardente Bagaceira Velha Alvarinho Quinta de Soalheiro emerged in 1999, with the release of the 1st series of 1428 numbered bottles. Since the first harvest, the production of this aguardente has been subject to the distillation of the best Alvarinho pomace, aging over the years in oak casks, from which it extracts the color and structure that complete the intense aroma of the grape variety. The aromatic skins of the Alvarinho grapes, separated from the must by pressing during the harvest, ferment for about 1 month in an environment without the presence of air (anaerobiosis). This fermentation transforms the existing residual sugar into alcohol, extracting the best aromas from the skins. The slow distillation in a traditional still helps to concentrate these aromas, resulting in a very aromatic aguardente characteristic of the Alvarinho variety. The alternation of aging in new and used oak casks imparts, over the years, a very particular aroma and flavor that give this aguardente a unique personality.
