Located south of the village of Ancas, in the municipality of Anadia, in the privileged area of Figueira da Costa. Vinification of the Sidónio de Sousa Special Cuvée Brut Sparkling Wine: the grapes are unloaded into the membrane press, where the free-run juice is extracted without pressing. The must is cooled for 24 hours, decanted, and transferred to a stainless steel tank where fermentation will take place, with temperature control. After fermentation, the wine naturally settles in the tank, being racked at the end of the year, when it is prepared for bottling sparkling wine, with free yeasts. The sparkling wine bottles go to the cellar for the 2nd fermentation in bottle at a controlled temperature and in the absence of light. After fermentation, the bottles remain in the cellar, aging until riddling and disgorging are performed without the addition of sugar, at which point the product is ready for commercialization.
