Vinification : Vendange manuelle. Ce vin résulte de deux types de fermentation : macération initiale avec contrôle de température et co-fermentation en fûts usagés de chêne français. Battonage pendant 12 semaines. Élevage : Élevage de 10 mois en fûts de chêne français de 600L (fûts de 1 et 2 ans). Climat : Méditerranéen continental. Jours chauds et secs, avec de grandes amplitudes thermiques quotidiennes.
