Le Real Companhia Velha Espumante brut est le résultat d'une sélection rigoureuse de Pinot Noir et de Chardonnay provenant essentiellement de la Quinta de Cidrô à São João da Pesqueira, une partie du Pinot étant récoltée à la Quinta do Casal da Granja dans le plateau d'Alijó. Le terroir de Cidrô, en raison de son altitude et de son climat doux, permet un cycle plus long sur la vigne, permettant ainsi que le Pinot Noir et le Chardonnay soient récoltés au moment parfait pour être effervescents. Cette magnifique Quinta, bien qu'elle soit située à 550 m d'altitude, dispose d'un sol pauvre et schisteux, ce qui entraîne des productions plus faibles, conférant à cet Espumante une excellente texture, volume et acidité. Dans le plateau d'Alijó, à la Quinta do Casal da Granja, les sols plus riches et un climat encore plus frais donnent des vins plus frais et aromatiques. Grâce à une taille ciblée, afin de préserver un niveau élevé d'acidité naturelle des raisins, les grappes les plus vertes sont récoltées et vinifiées dans de petites cuves en inox comme bases pour les lots finaux.
