Après une sélection rigoureuse des raisins dans la vigne, la vendange a été effectuée manuellement dans des caisses de 20 kg, puis soumise à un refroidissement en chambre froide jusqu'à 8-10ºC. Ensuite, ils sont sélectionnés sur un tapis de tri et pressés à basse pression dans un pressoir pneumatique. La fermentation alcoolique se déroule dans une cuve en Inox pendant une période de 18 jours avec une température contrôlée d'environ 15ºC. Après la fermentation alcoolique, le vin de base reste en élevage en Inox, favorisant le relèvement des lies fines jusqu'en février 2014. La seconde fermentation alcoolique en bouteille a commencé en juin 2014, prolongeant l'élevage en bouteille avec les lies de la seconde fermentation jusqu'au moment du dégorgement qui précède la commercialisation. Le dégorgement a eu lieu en octobre 2023, conférant au vin une grande complexité en raison des longues années d'élevage en bouteille.

Les arômes sont marqués par le long séjour avec les levures. Il présente des notes de biscuit, de toast et une légère touche de fruits secs.
