Fermentam 3 a 4 dias com as películas, regularmente imersas por remontagens, para maior extracção de cor e aromas. segue-se a separação das películas do mosto e neste é adicionada aguardente vínica a 77% v/v, para que o vinho apresente 20% e 90 a 120 g/l de açúcares redutores da própria uva. o envelhecimento decorre em balseiros e cascos de madeira.
