Vinification du Vin Vallado Rouge 2018 de 12 Litres : Environ 80 % des raisins proviennent de vignes plantées dans les années 1990 et 20 % de vieilles vignes âgées de 60 à 100 ans. Les raisins sont vinifiés dans des cuves en acier inoxydable de 5 et 10 tonnes de capacité, entièrement éraflés. Le moût fermente pendant environ une semaine à 23º-25ºC avec un remontage automatique programmé. Élevage : environ 70 % du vin est élevé pendant 16 mois dans des cuves en acier inoxydable et le reste en fûts de 225 lt de chêne français de 3ème et 4ème année.
