Vinification du blog Tiago Cabaço Vin rouge : En 2019, les vignes les plus anciennes et les meilleures parcelles ont connu une maturation longue et progressive, résultant en des raisins avec un équilibre exceptionnel entre acidité et tanins. Les variétés Syrah et Alicante Bouschet ont été celles qui ont le plus bénéficié des conditions favorables de la nature, livrant des raisins à un stade de maturation parfait. Avec une matière première de si haute qualité, ils ont décidé d'intervenir le moins possible, permettant aux raisins de s'exprimer d'eux-mêmes. Ils se sont limités à un léger foulage aux pieds dans les cuves, suivant les méthodes traditionnelles de la région, suivi d'un vieillissement en fûts neufs et de seconde main en chêne français, afin que le vin puisse s'exprimer de manière plus pure.

Soyeux et velouté en texture, c'est un rouge intense et structuré, vigoureux mais non agressif, complexe et élégant, avec une finale fraîche et un grand potentiel de garde.
Tendu et fermé, concentré et puissant, floral et fruité, se termine par quelques notes terreuses qui lui ajoutent de la complexité.
