Les raisins provenant de Vinhas Velhas ont été transportés dans des caisses de 22 kg de capacité et soumis à un tri rigoureux sur une table de sélection à l'entrée de la cave. Après un éraflage total et un léger écrasement, le moût a été transféré dans des cuves de fermentation en acier inoxydable avec température contrôlée. À la fin de la fermentation alcoolique, une pressurisation douce a été effectuée. Quinta do Crasto Reserva Vinhas Velhas a vieilli en fûts de chêne français (85 %) et de chêne américain (15 %), où il est resté environ 18 mois.
