Au IXe siècle, le rhum est devenu une boisson de qualité et prisée. Des distilleries et des marques ont vu le jour avec le soutien de la couronne espagnole. Cuba a été le berceau du rhum. Cuba produit également un rhum plus léger et plus frais que dans d'autres parties des Caraïbes, grâce à une demande de la Couronne espagnole, qui préférait ses spiritueux au goût délicat. Le rhum Conde de Cuba est récolté, distillé, vieilli et mis en bouteille dans une petite ville de pas plus de 2 000 habitants de la province de Las Tunas, à Amancio Rodriguez, dans le sud-est de Cuba, une terre dont le climat est idéal pour la culture de la canne à sucre 100 % autochtone "medialuna".
