The must goes through two decantations (débourbage), one in the pressing house immediately after crushing and the second, a débourbage à froid, in stainless steel tanks at 6°C over a period of 24 hours. A slow, refrigerated fermentation, with the temperature kept below 18°C, takes place in stainless steel tanks, keeping each variety separate. The wine undergoes complete malolactic fermentation before final blending. Secondary fermentation takes place in the bottle at 9°C in Pol Roger's deepest cellars (33 meters below street level), where the wine is kept until it undergoes remuage (hand shaking), a rarity these days in Champagne. The very fine and persistent mousse, for which Pol Roger is known, owes a lot to these deep, cool and humid cellars.

Pale salmon with hints of rose.

In the mouth, it fills the palate with sophistication and impressive length. Despite the clear maturity on the palate, the wine has excellent freshness and a very present acidity, suggesting a bright future.

The aroma is intense and reminiscent of a basket of red fruits, where raspberry, currant and cassis mix, with the additional nuances of exotic mango and papaya.
